How It’s Made: The Point Blank Tequila Process

Mountain-grown organic agave is where it all begins. Harvested by hand at peak maturity by seasoned jimadores, each piña is a product of patience and precision — because good tequila begins in the soil. 

From the field to the final pour, every step is shaped by tradition, time, and the discerning eye of our master distiller —  Zandra Gomez Santiago —  whose standards of excellence are infused into every batch. Crafted at Desiladora Agave Azul, a family-run distillery in the birthplace of tequila, our juice is slow-cooked in ovens, naturally fermented, and triple-checked for clarity, character, and complexity. 

Here’s an overview of how the experts at Point Blank transform raw agave into bold, honest, additive-free tequila.

1. Growing the Agave

We start in the Highlands of Jalisco, where mountain-grown Blue Weber agave matures slowly under the sun. Rich volcanic soil and cool nights create the sweet, complex piñas we’re known for.

2. Harvesting the Agave

Each agave is hand-selected and harvested at peak maturity by seasoned jimadores using a sharp-bladed coa. It’s precision work — and the first cut in our promise of purity.

3. Slow-Cooking in Ovens

The piñas are slow-roasted in stainless steel autoclaves to caramelize natural sugars. No flash heat, no additives — just time, temperature, and tradition.

4. Extraction of Agave Juice

Cooked agave is crushed with a roller mill to release aguamiel, the rich, golden juice at the heart of every pour. We capture every drop with care — nothing wasted, nothing added.

5. Fermentation

In this stage, wild and cultivated yeasts awaken. The rich agave juice begins its transformation—bubbling, breathing, alive. Over days, sugars surrender to time and temperature, becoming the spirit beneath the surface. Nothing rushed. Nothing masked. Just raw, patient alchemy.

6. Distillation

Purity isn’t an accident—it’s an art. Through fire and copper, we distill our tequila with intention, separating the heart from the rest. What remains is crystal clear: bold agave character, layered complexity, and nothing that doesn’t belong.

7. Barrel Charring

Before tequila meets wood, fire prepares the barrel. We char the oak to unlock layers of flavor—vanilla, smoke, and spice waiting to be drawn out. It’s the first spark of character.

8. Aging in Charred Oak Barrels

To deepen the spirit, we rest select tequilas in charred oak barrels. No artificial color. No added sweeteners. Just oak, fire, and time—shaping bold complexity from patient stillness.

Zandra Gómez Santiago is more than a master distiller — she is a generational force in tequila. As the award-winning Chief Distiller at Destiladora Agave Azul in San Juanito de Escobedo, Jalisco, she oversees every aspect of production at the third-generation distillery known for excellence in both tradition and innovation.

Named the 2024 Best Woman Distiller by the Women’s International Wine & Spirits Competition, Zandra is a trailblazer in a male-dominated industry. Her expertise spans every step of tequila making — from selecting agave to overseeing cooking, fermentation, distillation, and aging.

Her hands don’t just guide the process — they shape it. Her meticulous attention to detail ensures that every bottle of Point Blank reflects our land, our people, and our passion.

  • The Añejo: Aged in Truth, Crafted with Patience
    This is where things get serious. Eighteen months in barrel delivers a deep, smooth, complex flavor for those who appreciate patience. Our Añejo isn’t dressed up with sugar or dyes. It’s truth, aged to perfection.
